Keto Mini Pepperoni Pizzas Ingredients: 4 oz cream cheese 12 oz shredded mozzarella cheese + extra for topping 2.5 oz almond flour 2 eggs 4 tsp baking powder black pepper 8 tbsp Rao’s marinara or other sugar-free mini pepperoni slices Directions: Preheat oven to 425F. In a microwavable bowl, combine 12 oz mozzarella cheese and cream cheese. Microwave for 90 seconds, stir and microwave again in 30 second increments until thoroughly melted.  In another bowl, combine almond flour and baking powder, stir to mix. Add black pepper and eggs. Add to melted cheese mixture and stir until combined. Turn out dough onto a surface lightly sprinkled with almond flour. Divide into 4 equal parts. Shape each into a ball and flatten into a 8 inch circle onto a cookie sheet lined with parchment paper. Bake at 425F for 8 minutes or until edges begin to turn golden. Top each pizza with 2 tbsp sauce, sprinkle with cheese, top with mini pepperoni. Put back into 425F

Tuna Salad with Cucumber Chips (plus veggies with ranch) - Easy Keto Meal Prep

The holidays are over. It's time for my hardworking husband to return to his hectic schedule of working during the day and going directly to law school afterwards for evening classes. Luckily, this semester he was able to choose classes which all end by 8:30 pm!!! This is huge for us. I typically have to meal prep breakfast, lunch, and dinner for him. Zucchini Lasagna - Recipe

I wasn't expecting to like a noodle free lasagna but, I believe this is every bit as good and satisfying as a non-keto version. The secret is to slice the zucchini thin (using a mandoline slicer like this one  is a must) and then to lightly cook each slice to remove excess moisture and soften. The lasagna cut easily and maintained layering for the most part. Creamy, meaty, yummy. Ingredients: 2-3 medium Zucchini (italian squash) 14oz Full Fat Ricotta Cheese 2 Eggs 16oz Shredded Mozzerella Cheese 28oz Marinara Sauce (low sugar) 1lb Ground Beef 2oz Parmesan Flakes (the good kind) Trim off ends and thinly slice zucchini lengthwise using a mandoline slicer . Discard first and last slices as they are mostly skin. Gently warm each slice, on both sides, using a nonstick pan  like this one , until they start to develop a hint of color. Set aside to cool. Better than Sous Vide, Egg Muffins - Recipe

I don't know about you, but I hate eggs. Eggs are such an important part of the Keto diet that I've been working on ways to make them taste better while still being convenient. Starbucks sous vide egg bites are all the rage right now. I've been making my own version in my slow cooker for a while now but the texture is never quite right. They are just too soft and more like scrambled eggs than a egg bite. So I've gone back to egg muffins. The major obstacle with egg muffins is the clean up but I found the answer to that! This  Keliwa 12 cup Muffin Tin from Amazon  just needs a quick non-stick spray and the egg muffins don't stick! Egg Muffins 11 large Eggs 1/2 cup Heavy Whipping Cream 1/4 cup Cottage Cheese 1 cup Shredded Cheddar Cheese 1 cup Bacon (cooked and crumbled) Salt & Pepper Preheat oven to 350 degrees. Cauliflower rice can be hard to work with. The objective is to alter both the flavor and the texture. Now that I've mastered those things, riced cauliflower is one of my most often used ingredients and accompanies most meals.  I'm a huge fan of Bird's Eye Riced Cauliflower in the Steamfresh bag. Just follow the directions on the bag and  throw it in the microwave, so easy. But, I wouldn't stop there. It needs more help.  I love a loaded baked potato and I set out to find a keto alternative. After steaming the 10oz bag of cauliflower rice according to directions, add to a sauce pan with 2 tablespoons of butter and 1/4 cup of chicken broth (or beef or vegetable broth), heat over medium-low heat covered for a few minutes, and uncovered for a few minutes until liquid is absorbed, stir occasionally and season with salt and pepper along the way, let cool uncovered for a few minutes.  Now that you have your baked potato alternative, top with your favorites such as: Cru

Keto, Dirty Keto, Easy Keto, Clean Keto, LCHF - What's the deal?

If you've been keeping up with diet trends as long as I have you know Keto is not new. My first memory of it was Dr. Atkins (I referred to him at Dr. Fatkins) and his low carb diet book. I remember searching the pharmacy for ketone test strips so I could make sure I was doing the diet correctly. Soon after, South Beach was introduced which was modified low carb (probably defeated the whole purpose). Recently I've been attempting to gain recipe inspiration on YouTube and people are talking about Keto as being this very specific and very restrictive diet. I'm hearing that "True Keto" is 100% gluten free, grassfed, etc. No, no, no. Why take something so easy and useful and screw it up? If you want to combine Paleo, Keto, and maybe even Veganism, you'd probably have a super healthy diet. But, you'd probably be starving too. What would you even eat? Why complicate life? Allulose - The best tasting sugar alternative

I've been battling a sugar addiction for all my life. But, I find most alternative sweeteners absolutely disgusting. I find no enjoyment in drinking a diet soft drink or adding a packet of anything found in a restaurant's sweetener dish (besides actual sugar) to my coffee. But, I realize the calorie count in sugar, raw sugar, or honey is not going to help in my eternal quest to be lighter and have more energy. I found Allulose on Amazon and it had great reviews.There is no aftertaste and it is now my absolute favorite alternative sweetener. It's only about 70% as sweet as sugar, it's hard to find, and it is a bit expensive. Allulose dissolves easily, even in cold drinks, and it can be used in baking (it browns like sugar) or for candy . I'm hoping this will be used in more keto and low carb products in the future.
