Loaded "Potatoes" using Cauliflower Rice - Recipe
Cauliflower rice can be hard to work with. The objective is to alter both the flavor and the texture. Now that I've mastered those things, riced cauliflower is one of my most often used ingredients and accompanies most meals.
I'm a huge fan of Bird's Eye Riced Cauliflower in the Steamfresh bag. Just follow the directions on the bag and throw it in the microwave, so easy. But, I wouldn't stop there. It needs more help.
I love a loaded baked potato and I set out to find a keto alternative. After steaming the 10oz bag of cauliflower rice according to directions, add to a sauce pan with 2 tablespoons of butter and 1/4 cup of chicken broth (or beef or vegetable broth), heat over medium-low heat covered for a few minutes, and uncovered for a few minutes until liquid is absorbed, stir occasionally and season with salt and pepper along the way, let cool uncovered for a few minutes.
Now that you have your baked potato alternative, top with your favorites such as:
Crumbled bacon
Sour Cream
Shredded Cheese
Diced Green Onion
Salsa
