Keto Mini Pepperoni Pizzas

Ingredients:
4 oz cream cheese
12 oz shredded mozzarella cheese + extra for topping
2.5 oz almond flour
2 eggs
4 tsp baking powder
black pepper
8 tbsp Rao’s marinara or other sugar-free
mini pepperoni slices

Directions:
Preheat oven to 425F. In a microwavable bowl, combine 12 oz mozzarella cheese and cream cheese. Microwave for 90 seconds, stir and microwave again in 30 second increments until thoroughly melted. 

In another bowl, combine almond flour and baking powder, stir to mix. Add black pepper and eggs. Add to melted cheese mixture and stir until combined.

Turn out dough onto a surface lightly sprinkled with almond flour. Divide into 4 equal parts. Shape each into a ball and flatten into a 8 inch circle onto a cookie sheet lined with parchment paper. Bake at 425F for 8 minutes or until edges begin to turn golden.

Top each pizza with 2 tbsp sauce, sprinkle with cheese, top with mini pepperoni. Put back into 425F oven for 4 minutes or until cheese is melted.

Makes 4 small pizzas
